Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup chopped sweet carrots
  • ½ cup petite frozen peas
  • 1 ¾ cups rich chicken stock
  • 1 cup homemade creamy chicken soup
  • 1 cup self-rising flour
  • 1 cup whole milk
  • ¼ cup salted butter
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried thyme

Method

Step 1: Prepare the Chicken
  1. Start with the chicken. If you have leftover rotisserie chicken, this is the perfect use for it. Shred or dice the meat into bite-sized pieces. Add them to a mixing bowl. Those lovely bits of chicken are going to be the star of our show.
Step 2: Add the Vegetables
  1. Now, toss in the chopped sweet carrots and petite frozen peas. There’s something beautifully nostalgic about veggies in a comforting dish like this. The colors brighten it up, making it inviting. Mix everything until the chicken is coated with the veggies.
Step 3: Create the Sauce
  1. In a separate bowl, combine the chicken stock and homemade creamy chicken soup. Stir until well mixed. The creamy soup adds richness, and the chicken stock infuses all the flavors together. Pour this mixture over the chicken and vegetable mix and stir gently.
Step 4: Make the Dumpling Batter
  1. In another bowl, combine the self-rising flour, whole milk, melted salted butter, garlic powder, and dried thyme. Mix until you get a smooth batter. The key to fluffy dumplings is not over-mixing. You want them tender, not tough!
Step 5: Assemble Everything
  1. Pour the chicken and vegetable mixture into a greased baking dish. Next, dollop spoonfuls of the dumpling batter over the top. Don't worry about making it look perfect; the dumplings will spread and puff up while baking.
Step 6: Bake
  1. Preheat your oven to 350°F (175°C) and bake for about 30 to 40 minutes. You’ll know it’s ready when the dumplings are golden brown and a toothpick inserted comes out clean.
Step 7: Serve and Enjoy!
  1. Once it’s out of the oven, let it cool for a few minutes. Ladle generous portions into bowls and watch as everyone gathers, eager to dig in. You’ll cherish every bite, and so will your guests!

Notes

  • Use Quality Stock: A good quality chicken stock makes a noticeable difference.
  • Don’t Rush the Dumplings: Let the batter rest for about 10 minutes before spooning it onto the chicken mixture. This ensures fluffy dumplings.
  • Customize Veggies: Feel free to mix in other veggies like corn or green beans based on your preference.
  • Leftover Rotisserie Chicken: What a time saver! It gives great flavor and saves you cooking time.
  • Taste and Adjust: Always taste your mixture before baking. If it needs more seasoning, add salt or other spices.
