Ingredients

Soup:
  • 1 pound boneless, skinless chicken breast cut into cubes, approximately 2 large breasts
  • 2 tablespoons extra virgin olive oil
  • 1/3 cup unsalted butter about 5 1/2 tablespoons, or 2/3 of a stick
  • 1 medium yellow onion chopped, roughly 1 cup
  • 1 large carrot sliced, about 1 1/4 cups
  • 2 medium cloves of garlic finely minced
  • 1 cup diced potatoes
  • 6 cups homemade chicken broth
  • 1/3 cup all-purpose flour
  • 1/2 cup whole milk
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon dried parsley flakes
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon fine sea salt
  • 1 1/2 cups frozen green peas
  • 1/2 teaspoon smoked paprika
Dumplings:
  • 2 cups Bisquick mix
  • 2/3 cup whole milk

Method

Step 1: Prepare the Ingredients
  1. Start by chopping your vegetables and cubing the chicken. Have everything ready. This makes cooking smoother and quicker.
Step 2: Heat the Pan
  1. In a large pot, heat the olive oil over medium heat. Add the butter and let it melt, creating a rich base for your soup.
Step 3: Sauté the Aromatics
  1. Add the chopped onion, carrot, and garlic to the pot. Sauté until the onion becomes translucent. The aroma filling your kitchen is simply heavenly!
Step 4: Add Chicken and Potatoes
  1. Now it’s time to toss in your chicken and diced potatoes. Cook for about five minutes until the chicken starts to brown.
Step 5: Pour in Chicken Broth
  1. Slowly add the chicken broth while stirring. This is the heart of your soup. Bring it to a gentle simmer.
Step 6: Spice It Up
  1. Sprinkle in the thyme, parsley, rosemary, pepper, salt, and smoked paprika. Stir well and let it simmer for about 15 minutes.
Step 7: Add Peas and Thicken
  1. Once the chicken is cooked through, add in the frozen peas. To thicken the soup slightly, whisk together the flour and milk in a bowl, then stir it into the pot. This will give it that creamy consistency.
Step 8: Prepare the Dumplings
  1. In a separate bowl, combine the Bisquick mix and milk to create a slightly lumpy dough. No need to overmix!
Step 9: Drop in Dumplings
  1. Using a spoon, drop dollops of dumpling mixture over the bubbling broth. They will expand as they cook. Cover the pot and let it simmer for about 15-20 minutes. Resist the urge to lift the lid!
Step 10: Serve and Enjoy
  1. Once the dumplings have risen, your dish is ready! Ladle it into bowls, and feel the warmth spread through you.

Notes

  • Use Leftover Chicken: If you have rotisserie chicken or any leftover cooked chicken, use that to save time.
  • Make It Gluten-Free: Substitute the Bisquick mix with a gluten-free baking mix.
  • Add More Veggies: Feel free to mix in peas, corn, or even spinach for added color and nutrients.
  • Flavor Boost: A splash of white wine can give your broth some depth. Add it after the onions have sautéed for a while.
  • Store It Right: Cool before storing leftovers in an airtight container in the fridge for up to three days.
