Chicken Caprese Panini Recipe - Comfort Food Meals

I remember the first time I bit into a chicken caprese panini. It was at a cozy café tucked away on a sunlit street in Italy. Each bite felt like a celebration. The melted mozzarella, fresh basil, and juicy tomatoes danced together, making taste buds sing with joy.
Fast forward to today, I still love making this dish at home.
You don't need to travel to Italy to experience its charm. With a few ingredients and steps, you can create your own mouthwatering version. So, let’s explore the world of chicken caprese paninis, shall we?

Ingredients

  • 1 tablespoon spreadable butter
  • 1 tablespoon olive oil
  • 8 slices of brioche bread
  • 1 pound cooked, boneless chicken breast thinly sliced
  • 4 ounces fresh mozzarella, sliced
  • 2 medium tomatoes sliced into 1/4-inch thick rounds
  • 1/4 teaspoon sea salt
  • 1 tablespoon balsamic reduction
  • 1/2 cup fresh basil leaves

Method

Step 1: Prep Your Ingredients
  1. Start by preparing all ingredients. Slice the chicken, mozzarella, and tomatoes. Take a moment to wash and pat-dry the basil leaves. Having everything ready makes the process smooth.
Step 2: Butter the Bread
  1. Spread butter on one side of each slice of brioche bread. This may seem simple, but that buttery goodness is what makes your panini golden and crispy.
Step 3: Assemble the Panini
  1. Start with a slice of bread, butter-side down. Layer it with sliced chicken followed by mozzarella, tomatoes, and basil. Sprinkle a touch of salt over the tomatoes. Drizzle balsamic reduction for that punch of flavor. Finish with another slice of bread butter-side up.
Step 4: Heat the Panini Press
  1. Preheat your panini press or a stovetop skillet over medium heat. If using a skillet, you will need something heavy to press down on the sandwich.
Step 5: Grill Until Golden
  1. Place the assembled panini onto the press or skillet. Grill for about 3-5 minutes until the bread is golden brown and the cheese is melty.
If using a skillet, check after a few minutes, pressing down with a heavy skillet to help with the melting.
Step 6: Slice and Serve
  1. Once it’s golden and gooey, remove the panini and let it rest for a minute. This helps the cheese firm up slightly, so it doesn't ooze out when you cut it. Slice diagonally and serve with a side salad or your favorite chips.

Notes

  • Use High-Quality Ingredients: The fresh mozzarella and ripe tomatoes make all the difference. Quality matters!
  • Let Ingredients Come to Room Temperature: This ensures even heating and better flavor melding.
  • Experiment with Bread Types: While brioche is sweet, ciabatta or sourdough works wonderfully too. Don’t shy away from experimenting.
  • Don’t Overcrowd the Panini: This can lead to sad, soggy bread. A little space allows for even grilling.
  • Play with Add-Ins: Feel free to throw in avocado, pesto, or even a dash of red pepper flakes if you're looking for extra flavor.
