Ingredients

  • 1 pound fettuccine pasta: The star of the show! Look for fresh or dried varieties according to your preference.
  • Pinch of sea salt and freshly ground black pepper: Essential for enhancing flavors.
  • 1 stick unsalted European-style butter: It adds richness. European-style butter has a higher fat content, making your sauce even creamier.
  • 1 cup heavy whipping cream: This forms the base of the alfredo sauce, providing that desired creaminess.
  • 2 cups finely grated Parmigiano-Reggiano cheese: The key ingredient for flavor. It’s worth investing in high-quality cheese here.
  • 1 teaspoon garlic powder optional
  • 1/4 teaspoon freshly grated nutmeg optional

Method

Step 1: Cook the Fettuccine
  1. In a large pot, bring salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente. This usually takes around 8 to 10 minutes.
  2. Make sure to stir occasionally to prevent the pasta from sticking. Once done, reserve about a cup of pasta water for later use. Drain the pasta and set it aside.
Step 2: Prepare the Sauce
  1. In a large saucepan, melt the butter over medium heat. As the butter starts to bubble, pour in the heavy cream. Stir continuously to combine.
  2. Slowly bring the mixture to a gentle simmer. This should take about 3-5 minutes. Make sure not to let it boil—your sauce prefers a gentle touch!
Step 3: Add Cheese and Season
  1. Once the cream and butter are simmering, gradually add the grated Parmigiano-Reggiano cheese. Stir constantly as the cheese melts into the sauce, creating a creamy consistency.
  2. At this point, season with garlic powder, nutmeg, salt, and pepper to taste. Keep stirring until the sauce is smooth and thickened, which usually takes around 2-3 minutes.
Step 4: Combine Pasta and Sauce
  1. Add the drained fettuccine to the pot of sauce, tossing to coat each noodle evenly. If the sauce seems too thick, add a little reserved pasta water to reach your desired consistency.
  2. The warmth of the pasta will help the sauce cling beautifully.
Step 5: Serve Immediately
  1. Plate your fettuccine alfredo and garnish with extra cheese, freshly cracked pepper, or chopped parsley if you like. Enjoy this creamy delight while it’s hot!

Notes

Quality Ingredients Matter: Using high-quality cheese and butter significantly affects the flavor. Opt for fresh Parmigiano-Reggiano over pre-grated alternatives.
Fresh vs. Dried Pasta: Fresh fettuccine cooks faster than dried pasta. Keep an eye on it to avoid mushiness.
Sauce Consistency: If the sauce is too thick, gradually incorporate the reserved pasta water. Start with a small amount and adjust to your preference.
Storage: Store any leftovers in an airtight container. Reheat gently on the stove with a splash more cream or water to revive the sauce.
Experiment: Feel free to add veggies like spinach, peas, or mushrooms for added nutrition and flavor. Grilled chicken or shrimp can also offer a protein boost.
