Grandma's Chicken and Dumplings Recipe - Comfort Food Meals

As a kid, I spent countless afternoons in my grandmother’s kitchen. The air was filled with the delightful, savory smells of slow-cooked chicken simmering in broth, and laughter floated about as we shared stories while waiting for dinner.
The highlight of the meal was always her chicken and dumplings. It was simple, hearty, and had a way of bringing everyone together.
Whether you’re revisiting memories or creating new ones, this dish is meant to be shared and enjoyed. Today, I’m excited to pass down Grandma's cherished recipe, revealing what makes it a must-try for anyone looking to embrace the comfort of a homemade meal.

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 chicken bouillon cubes
  • 1 small onion, diced
  • 2 cups diced celery
  • 2 cups chopped carrots
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups of all-purpose flour
  • 1/2 cup vegetable shortening
  • 1/2 cup whole milk
  • 1 large egg
  • Salt and freshly ground black pepper, to taste

Method

Step 1: Prepare the Chicken
  1. Start by placing the chicken pieces into a large pot. Cover them with water, add the bouillon cubes, and bring everything to a gentle boil. This step alone fills your kitchen with a comforting aroma.
Step 2: Add the Vegetables
  1. Once the chicken is cooking, it’s time to add the diced onions, celery, and carrots. The vegetables provide nutrients and texture. Let them simmer with the chicken for about 30 minutes. This allows all the flavors to mingle, creating a rich base for your dish.
Step 3: Season the Broth
  1. Season the pot with dried thyme, bay leaf, salt, and pepper. Stir it all together and let it bubble away. During this time, the chicken will continue to cook until it's tender and succulent.
Step 4: Make the Dumpling Dough
  1. In a separate bowl, combine the flour, baking powder, and a pinch of salt. Cut in the vegetable shortening until the mixture resembles coarse crumbs. In another bowl, whisk together the milk and egg, then gently fold this into the dry ingredients. The key is to mix until just combined.
Step 5: Add the Dumplings to the Broth
  1. With a spoon, drop dollops of the dumpling mixture onto the simmering broth. Make sure they’re not too close together—they’ll expand! Cover the pot and allow them to steam for about 15-20 minutes. You’ll know they’re done when they’ve puffed up and look fluffy.
Step 6: Serve and Enjoy
  1. Once the dumplings are cooked, remove the pot from heat. Discard the bay leaf, and quickly taste for seasoning. Serve the chicken and dumplings hot in bowls, reveling in the delightful flavors.

Notes

  • For Extra Flavor: Sauté the onion in a little olive oil before adding it to the pot.
  • Don’t Skip Resting Time: Let the dumplings rest in the broth for at least a few minutes before serving.
  • Fresh Herbs: If you have fresh thyme or parsley, feel free to add them for added freshness.
  • Thicker Broth: If you prefer a thicker broth, consider adding a slurry of flour and water just before adding the dumplings.
  • Storage Tip: Leftovers can be stored in an airtight container for up to 3 days in the refrigerator.
